This is called a coffee cake, but from the comments I hear at church it is
beyond heavenly!

Apple-Nut Coffee Cake

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup granulated sugar
1/2 cup shortening
2 large eggs
1 teaspoon vanilla extract
1 cup dairy sour cream (fat-free or lite works great)
2 cups finely chopped apple

TOPPING-
1/2 cup chopped nuts
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons butter, melted

Grease a 9X13 pan (I use two 8 in. round pans) and preheat the oven to 350
degrees.

In bowl, stir together flour, baking powder, baking soda and salt. In
second bowl, cream together granulated sugar and shortening. Beat in eggs
and vanilla. Add flour mixture and sour cream alternately to creamed
mixture. Fold in chopped apples. Spread in greased pan(s).

TOPPING-
Combine nuts, brown sugar and cinnamon. Stir in melted butter until
crumbly. Sprinkle evenly over batter. Bake at 350 for 35 to 40 min. Serve
warm or cooled. Whipped cream makes it even better!

Note- I love the topping and make a double batch to put a nice thick layer
on the cake(s).

Being the kind of cook I am (or not!), I rarely print out these recipes
- but I *have* printed out this one. It sounds delicious and just a bit
different. I have a lemon drizzle cake in my next few days' plans; but
I do think I will make this one in a week or two.
Thank you, you rascal.
