Rita, I got this recipe from a really sweet old gal
in 1988. Kind of odd recipe but it is a good cake.
Enjoy! I just bought a bunch of fresh apples. I
may need to make one of these and Leslie's
coffee cake too!

Mrs. Irey Fresh Apple cake
Mix together:
2 eggs
2 cups white sugar
1/2 cup oil
1 tsp. vanilla extract
Sift together:
2 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
Combine the two mixtures.
Stir in:
4 cups green apples (peeled and diced)
1 cup chopped nuts
Mix well it will be very thick. You can mix together with your hands
it is so thick.
Bake in 9"x13" pan (grease and flour) 350 for 50-60 minutes.
Icing:
8 oz. cream cheese
1/2 cup butter
1 lb. powdered sugar
1 tsp. vanilla
1 cup chopped pecans or walnuts
1- 5oz. can crushed pineapple well drained
Cream butter and cream cheese. beat in the rest.
You will only need about half recipe of icing for
9x13 pan. If you like a lot of icing make two
layers instead and use whole recipe.

The batter mixes up really thick. Everytime I
make it I think I put it together wrong. I guess
the moisture in the apples when it bakes is
what makes it work. There are a lot of apples
in it.

Taria, I am guessing the cream cheese and butter are softened to room temp
before you start the icing?
