We have been getting his show for about 6 weeks, a replacement to 'The Cook
and the Chef'.
I have been enjoying it too, although I had never heard of him before.

what is called hamburger in the usa is called mince here.
we have beef mince, pork mince, chicken mince. mostly beef tho.
cept that isnt the mincemeat in pies.
that is raisins mostly but other dried fruit too.
no idea why it is called mince meat.

Because it used to be a way of preserving minced meat through to
Christmas. I have made some with beef mince in it, and very good it is
too. My mum says it should be made with minced lamb, so I might try
that one day too.

I make Green Tomato mincemeat that is an adaptation in DH's family
from a mincemeat that contains meat. For a very long time (until Aunt
June got fancy and used boughten meat, according to Aunt Milly) they
made mincemeat using game. Some years the fellas just weren't all
that good at bringing it home, hence the green tomato mincemeat. They
make a venison mincemeat on that side of the family that is to die
for.

(and several under) has done jailtime for hunting out of season and/or
poaching

I do believe that the German mincemeat has venison, at least, that is
what my husband said. My gran always did the English mincemeat with
raisins, fruit and suet.
