so I was thinking about making another vest-hoodie for The Monk. But I'd
like to line it with a knit I have. How would I go about lining the hood?

If the pattern has an deep allowance for a turned-back edge
(around the face), cut that back to whatever seam allowance
you are using, use the altered hood pieces to cut both the
outer fabric and the knit lining, then sew any darts in each
separately, sew the center seam of each, then sew the
"front" edges of the hood and the lining together right
sides together. Turn right-side-out, and join the now-lined
hood to the body of the jacket/vest, finishing the neck edge
as instructed on the pattern.

Cool, that sounds very reasonable and not outside the realm of possibility
for me

I should have added, pin baste (or hand or machine baste)
the neck edges of the lined hood together, so that you are
working with "one piece" when you sew the hood to the
jacket/vest. Good luck,
