Bacon grease is a good substitute, if it's good bacon and you don't
get it too hot while frying the bacon.

When we were younger and thinner, I cooked bacon on our "Open Hearth"
electric broiler; the grease fell down to the catch tray as soon as it
melted, and made lovely white fat.

Oddly, the bacon flavor doesn't show up in pie crust. Mom said once
that she bought lard to make pie as a special treat, and people didn't
like it as well as her everyday bacon-grease pie crust.

[Snivel] By the time I was old enough to notice, pie was for
special occasions.

On the other hand, I never had to clean a pig pen.
