In Australia we can get a special fitted sheet elastic. It about 1.5cm wide
(about 3/4" in old money) with an area in the middle that is thinner so you
can fold it in half with the material inside. It looks like this:

You'll see it better if you enlarge the picture. The raised bit in the
middle is actually thinner than the elastic. It took me a little while to
get the hang of it (the material kept falling out as I was sewing) but with
lots of pins I managed. That way the ends of the fitted sheet are flat.
