My hat pattern most often made is in worsted weight (between DD and Aran),
usually acrylic, 96 stitches on US sizes 5 or 6 and 7 or 8 dpns, knitted
in the round, knit k1p1 or k2p2 ribbing until you're sick of it or you have
at least 5 inches (12.5cm), then switch to stockinette.
Stripes are good and this is a good place to start stripes.
Knit another 5 inches (12.5cm) then begin to decrease. If you have
lots of yarn decrease slower and make a long stocking cap; if not much
yarn, decrease in six places with k2tog (or ssk), k 5 rounds, decrease
again, k 4 rounds, decrease again, k 3 rounds, decrease (etc), trying
it on to check how much is left to do. When it reaches the middle,
k2tog all around and draw yarn through all remaining stitches. Fasten
the end and decide if you want to add a pompom or tassel or icord to be
knotted or a loop to hang it up by. For a long stocking cap, knit more
rounds plain between decreases.
My favorite scarf pattern is just to knit a stockinette tube in the round
until it's long enough to wrap around my neck nicely and tuck into the
coat. I like thick scarves so I make them as wide as my spread out fingers
and thumb. Flatten the ends and stitch closed when done. I don't put
fringe on as it gets caught in zippers.

Oh, this sounds like a perfect hat for me to make for my 2 boys. We don't
really get enough cold weather here in South Carolina to need a great deal
of cold-weather gear, but I still can't resist making them lots and lots of
hats. :-)
thanks for sharing!

That works too. I just like decreases better than increases.
Another good way is to knit ribbing for the whole length. The top middle
could be plain, or k1p1 ribbing could be double-decreased at the top.
There are many ways to adapt the basic pattern!
